Cheesecake Recipe

Found a great recipe for cheesecake that is so simple and went down really well with the whole family:

  • 250g digestive biscuits
  • 100g butter , melted
  • 600g soft cheese
  • 125g icing sugar
  • 284ml pot double cream
  • 400g punnet strawberries , halved 

Firstly you crush the biscuits and mix with the melted butter until the crumbs are completely coated.
Transfer them into your container pressing them firmly into an even layer and leave in the fridge to set.
Mix 100g icing sugar with the cream cheese and cream and whisk until smooth.
Spoon the mixture over the base and leave in the fridge to set overnight.
For the topping puree half of the strawberries with the remaining icing sugar and sieve.
Add the remaining strawberries and the puree and it's done.


*If you don't have time to leave it overnight a few hours in the fridge is fine it just wont be as firm.*
